It's Time To Say Goodbye...

To Blogger...So, I've moved.

I'm working out all the kinks and all that other stuff. But, I figured I'd let you know that since I'm COMPLETELY migrating over to another site.

Please update your RSS feeds.

Um, the place over there is kinda empty. BUT, no worries...we'll have the decorating team in there and doing great things within no time.

You can always e-mail me - darius@everydaycookin.com.

But, get over to the new site.

The Red Velvet Cupcake Revolution

So there has been a red velvet cupcake revolution - no seriously. I started baking them what - two weeks ago and can you believe I almost have 1,000.00 in revenue from these cupcakes. If this is ANY indication of where my future is headed - then let's go.

And you know what's funny is that I don't even bake. I HATE baking. It's too methodical and not free flowing - like I tend to be. BUT, the people LOVE these cupcakes.

So, I guess it behooves me to keep the Red Velvet Cupcake Revolution going, right? So...I am.

I'm developing recipes for a few more flavors...wanna hear them?

  • Rum cupcakes
  • Banana pudding cupcakes
  • German chocolate cupcakes
  • Peach cobbler cupcakes
  • Pineapple upside down cupcakes
Can you believe this? Me...the master of Everyday Cookin has now been baking. WOW - well, that's where I've been - lol.

Soon, I'm going to figure out how to ship these suckers online. Wanna place an order?!?! LOL

Seriously folks - it's all about staying true to two things - your passions and your dreams. You have them for a reason. Living out your passion is an art - be creative!

White Chicken Pizza - It was THAT good!

What more can I even say about this? Remember that Wrap Party I had for the Season 1 of Everyday Cookin? Well....I had left over red bell peppers. I thought LONG AND HARD about what to do with them. Know what I came up with?!?!

White chicken pizza...somehow chicken, red bell peppers, a hit of garlic, and Alfredo just seems to go well with me - so that's what I did.

I totally bought that pizza dough from the grocery store. BUT, I made my own Alfredo - I think I can make mine more flavorful than the ones in the jar. I tossed on a mix of mozzarella and aged cheddar cheeses, red bell peppers, chunks of chicken that were sauteed in olive oil, salt, and pepper, and that's it. Oh, I threw the red pepper flakes in the filling versus on top. I LOVE red pepper flakes on my pizza and I can never really get enough. So instead of putting it on the top - well, I'm the pizza maker - so I put it on the inside - lol.

Don't you just love it?

Well folks, enjoy the pictures. I've got a heaping handful of red velvet cupcakes to make this weekend. 11 orders to be exact with a few of those being 3-dozen orders! Pray for me!

Enjoy your weekend!

Cooking My Way to Skinny - Shrimp Scampi

What do you do with left over Chardonnay from the Wrap Party?

Easy.

You make shrimp scampi.

I really don't have a recipe. I just tossed a bunch of stuff in a skillet.

Let's see - I added:
low-fat margarine
white wine
lemon juice
olive oil
peas
shallots
garlic
lemon slices
parsley
shrimp

No lie and I cooked it until it was done.

Oh, wait - let's name the ingredients in the order in which they went into the pot:

margarine
olive oil
shallots
garlic
white wine
lemon juice
lemon wedges
peas
shrimp

Then I tossed it all with whole grain angel hair pasta!

Give it a try - happy cooking!
